Chocolate-Cottage Cheese Cheesecake

Ingredients

  • Crushed Vanilla Wafers 10 oz
  • Butter 0 oz
  • Sugar 2 cups
  • Liquid dark chocolate 20 oz
  • Cottage cheese 20 oz
  • Farm fresh eggs 4 pieces
  • Cocoa Powder 2 tablespoons
  • 10% cream ¾ cup

Step-by-Step Guide

Step 1

Soften the butter. Crush the wafers in a blender and, without turning off the blender, add 1 tablespoon of sugar and the butter. Blend until smooth. Take a 24 cm springform pan, grease it with butter, and line it with greased parchment paper. Transfer the mixture into the pan, press it down, and place it in an oven preheated to 390°F for 5 minutes. Remove it. Do not turn off the oven.

Step 2

Break 300 grams of chocolate into small pieces, place them in a heatproof dish, and melt them in a water bath. Let it cool slightly.

Step 3

Pass the cottage cheese (use full-fat) through a sieve and blend it with 1.5 cups of sugar and cocoa powder. While continuing to blend, add the eggs one at a time. Pour in the melted chocolate and mix. Spread the mixture into the pan and smooth it out. Bake in the oven at 355°F for 1 hour. Let it cool and refrigerate (preferably overnight).

Step 4

Break the remaining chocolate, about 200 grams, into small pieces, place them in a saucepan, add the cream and 1 tablespoon of sugar. Heat over low heat and remove as soon as the mixture becomes smooth. Let it cool, spread it over the surface of the cheesecake, and return to the refrigerator for 1 hour.

Step 5

Carefully transfer the cheesecake to a serving plate and do not return it to the refrigerator until serving.
