Chocolate Cookies in Mint Caramel Crumble
Ingredients
- Coarsely Ground Rye Flour 3 cups
- Cocoa Powder 1 cup
- Baking Powder 1 teaspoon
- Activated Baking Soda 1 teaspoon
- Ocean salt ¾ teaspoon
- Butter 10 oz
- Sugar 2 cups
- Vanilla extract 1 tablespoon
- Farm fresh eggs 3 pieces
- Mint Caramel 10 oz
- Mini Chocolate Chips 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Step 2
In a small bowl, mix together the flour, cocoa powder, baking soda, baking powder, and salt.
Step 3
In a large bowl, beat the softened butter with a mixer until creamy, then add the sugar and beat well again.
Step 4
Gradually add the eggs to the butter mixture, beating well after each addition. Then mix in the vanilla.
Step 5
Gradually add the dry ingredients to the butter mixture while mixing. Stir the dough well.
Step 6
Then fold in the crushed caramel, leaving some to sprinkle on top, and the chocolate chips. Mix the dough with a wooden spoon.
Step 7
Drop 1 tablespoon of dough onto the baking sheet, leaving space between the cookies. Sprinkle with the reserved caramel on top.
Step 8
Bake for 10-15 minutes until done.
