Ingredients
- Butter 5 oz
- Water 5 fl oz
- Brown Sugar 5 oz
- Cocoa Powder 1 tablespoon
- Instant coffee 1 tablespoon
- Wheat Flour 5 oz
- Egg white 1 piece
- Mascarpone Cheese Unagrande 5 oz
- Ground Coffee 1 teaspoon
- Powdered Sugar 0 oz
- Activated Baking Soda ¼ teaspoon
- Caramel Syrup to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a saucepan, combine water with sugar, heat while stirring constantly until the sugar dissolves. Then add 60 grams of butter, cocoa, baking soda, and coffee to the warm liquid. Bring to a boil, then simmer on low heat for a few minutes. Allow the mixture to cool.

Lightly beat the egg with a whisk or fork. In a separate bowl, mix the flour with the baking powder.

Combine the cooled liquid mixture with the flour and egg until you achieve a smooth, slightly runny batter.

Line a 6-cup muffin tin with paper (silicone or foil) liners. Distribute the batter among them, filling each liner ¾ full.

Bake for 20 minutes, until the muffins have risen slightly and feel firm. Allow to cool completely, for example, on a wire rack.

For the frosting: using a mixer, blend the mascarpone cheese with the softened butter (the remaining 25 grams), powdered sugar, and a spoonful of coffee (ingredients should be at room temperature). Place the resulting frosting in a piping bag with a large tip and decorate the muffins. The final touch is chocolate syrup, sauce, or melted dark chocolate (melted over low heat or in the microwave on low power) drizzled over the finished cupcakes.
