Chocolate Coffee Cake

Ingredients

  • Wheat Flour 1½ cups
  • Baking Powder 2 teaspoons
  • Liquid dark chocolate 5 oz
  • Butter 5 oz
  • Sugar 1 cup
  • Instant coffee 2 teaspoons
  • Salt ½ teaspoon
  • Milk 1 cup
  • Egg white 1 piece
  • Sour Cream 10 oz
  • Meyer Lemon Juice 2 tablespoons

Step-by-Step Guide

Step 1

For the batter, pour half of the milk into a small saucepan, bring it to a boil, and stir in the coffee and chocolate until dissolved.

Step 2

Place in cold water and cool to warm.

Step 3

Beat the room temperature butter with 2/3 cup of sugar.

Step 4

Gradually add the egg, chocolate mixture, flour, baking powder, and salt. The batter should be creamy.

Step 5

Pour the batter into a 22–24 cm diameter cake pan and place in a preheated oven at 200–430°F for 40 minutes. After 20 minutes, carefully open the oven and cover the pan with foil. Check the readiness of the cake with a wooden stick. Once baked, cool the cake and cut it into 2 layers.

Step 6

For the cream, prepare another portion of the chocolate mixture using milk, coffee, and chocolate. Cool it down.

Step 7

Whip the sour cream with a mixer, pouring in the chocolate mixture. Add sugar and lemon juice to taste.

Step 8

Line the cake pan with plastic wrap so that the ends hang over. Place one layer of cake and pour half of the cream over it. Add the second layer of cake and pour the remaining cream on top.

Step 9

Leave to soak overnight. To prevent the cream from drying out, you can cover the top of the pan with foil or plastic wrap, ensuring it does not touch the cream.

Step 10

In the morning, remove the cake from the pan by pulling on the hanging ends of the plastic wrap. Place it on a plate and decorate.
