  • Wheat Flour 10 oz
  • Cocoa Powder 4 tablespoons
  • Meyer Lemon Juice 1 tablespoon
  • Activated Baking Soda 1 teaspoon
  • Sugar 5 oz
  • Vegetable Oil ¼ cup
  • Vanillin a pinch
  • Salt a pinch
  • Water 5 fl oz
  • Instant coffee 1 teaspoon

Step-by-Step Guide

Step 1

In a large bowl, mix the dry ingredients: flour, salt, baking soda, and cocoa powder. In another bowl, mix the vegetable oil with sugar, lemon juice, and coffee dissolved in warm water. Beat with a mixer until the sugar is completely dissolved. Then pour the liquid mixture into the dry ingredients and mix thoroughly using a mixer or whisk.

Step 2

Instead of cocoa, you can use dark chocolate. For this, you will need to melt a chocolate bar in a water bath.

Step 3

Then preheat the oven to 355°F. Grease a baking sheet or baking pan with butter and lightly dust with flour. Pour the prepared batter into the pan and place it in the oven for 40–45 minutes. After 30–35 minutes, check the readiness with a toothpick to avoid overbaking the cake.

Step 4

Remove the cake, let it cool completely, and cut it into two layers. If desired, you can soak it with syrup (I used coffee liqueur, 0.5 teaspoons of instant coffee, and sugar syrup: you can vary it according to taste, totaling 200–250 ml).

Step 5

Layer with cream (any kind), assemble the cake, and pour over with chocolate glaze, or sprinkle with cocoa powder, powdered sugar, or grated chocolate (whatever you prefer, get creative).
