
Chocolate Cake with Strawberries and Mascarpone Cream

Ingredients
- Wheat Flour 15 oz
- Sugar 15 oz
- Cocoa Powder 0 oz
- Baking Powder 2 teaspoons
- Salt ¼ teaspoon
- Milk 5 fl oz
- Activated Baking Soda ½ teaspoon
- Boiling water 5 fl oz
- Vegetable Oil 5 fl oz
- 10% cream 5 fl oz
- Mascarpone Cheese Unagrande 15 oz
- Farm fresh eggs 3 pieces
- Strawberry to taste
- Powdered Sugar to taste
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. It's best to line the baking pan with parchment paper.
Step 2
Sift the flour and cocoa powder. Add sugar, baking powder, baking soda, and salt. Mix well.
Step 3
Add oil, eggs, and milk to the dry ingredients. Beat everything for about half a minute. Pour in the boiling water and mix again.
Step 4
Pour the batter into the pan and bake for 40–50 minutes (it's best to check with a toothpick; it should come out clean).
Step 5
After baking, remove from the oven and let cool for a couple of hours, but I left it overnight just to be sure. Cut into 2 layers.
Step 6
For the cream, lightly whip the mascarpone, adding powdered sugar. Gradually pour in the cream while continuing to whip. IMPORTANT: the mixture should become airy but not liquid.
Step 7
Spread cream on the bottom layer and top with slices of strawberries. Place the second layer on top and cover the entire cake with cream. Decorate with strawberries.
