Ingredients
- Chocolate 5 oz
- Butter 5 oz
- 10% cream 0 fl oz
- Wheat Flour 5 oz
- Cocoa Powder 0 oz
- Sugar 10 oz
- Chicken Egg 2 pieces
- Whole egg 2 pieces
- Baking Powder 1 tablespoon
- Freshly squeezed orange juice 5 fl oz
- Spices to taste
- Orange zest 2 spoons
- Corn Starch 2 spoons
- Salt a pinch
Step-by-Step Guide
Step 1
Melt the chocolate in a double boiler, add 100 g of butter and cream, stirring occasionally until the mixture is smooth. Add half of the zest and ground fragrant pepper to taste, and mix well. Set aside.
Step 2
Combine the flour, cocoa powder, 150 g of sugar, and baking powder. Lightly whisk 2 eggs and add them to the cooled chocolate mixture. Gradually fold in the flour in 2-3 portions, mixing gently after each addition to avoid lumps.
Step 3
Pour the batter into a greased baking dish and bake at 340°F for about 30 minutes, or until fully cooked.
Step 4
For the cream: whisk the egg yolks and orange juice together until slightly frothy, then add the remaining sugar, cornstarch, and zest. Bring to a boil and cook for a couple of minutes, stirring constantly with a whisk. Remove from heat and add the butter, stirring until fully incorporated. Cover with plastic wrap and allow the cream to cool.
Step 5
Remove the finished cake layer from the mold and let it cool completely, then spread the cream on top and decorate with zest. Store in the refrigerator.
