Chocolate Cake with Cheese and Mango

Ingredients

  • Chicken Egg 6 pieces
  • Liquid dark chocolate 5 oz
  • Sugar 5 oz
  • Coarsely Ground Rye Flour 5 oz
  • Butter 5 oz
  • Gelatin 6 pieces
  • Mango 6 pieces
  • Mascarpone Cheese Unagrande 15 oz
  • Cream 5 fl oz
  • Pistachios 5 oz

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Melt the chocolate in a water bath. Whisk the egg yolks with 50 grams of sugar and, while stirring, pour in the melted chocolate. Beat the egg whites with 20 grams of sugar until stiff peaks form and pile them on top of the yolk mixture. Sift the coarse flour on top, add the melted butter, and mix well.

Step 3

Pour the batter into a greased springform pan and bake the cake in the middle of the oven for 30–40 minutes. Remove the cake from the pan, cool it on a rack, and cut it into 2 layers.

Step 4

To prepare the cream, soak the gelatin in cold water. Peel 2 mangoes, cut the flesh, and puree it with the remaining sugar and mascarpone. Dissolve the soaked gelatin in a saucepan over low heat and gently mix it with the cream. When the mixture starts to set, fold in the whipped cream. Spread 2/3 of the cream on the bottom layer, cover with the second layer, and spread the remaining cream on top.

Step 5

Peel the mango, slice the flesh thinly from the pit, and arrange the slices in a fan shape on the cake. Sprinkle the sides of the cake and the mango slices with pistachios.
