Chocolate Cake with Blackberries
Ingredients
- Sugar 0 oz
- Farm fresh eggs 6 pieces
- Cocoa Powder 8 tablespoons
- Serviceberries 20 oz
- Butter 5 oz
- Semi-soft cream cheese 10 oz
- Cream 4 tablespoons
- Cocoa Powder 1 cup
- Powdered Sugar 3 cups
- Vanilla salt 1 teaspoon
- Wheat Flour 2 cups
Step-by-Step Guide
Step 1
Preheat the oven to 355°F. Line 3 round 23 cm pans with parchment paper and grease with butter, then dust with flour. Set aside.
Step 2
Melt the butter in a saucepan and remove from heat. Mix with sugar and stir. Add the eggs one at a time, beating after each addition. Gradually add the flour and cocoa.
Step 3
Divide the prepared batter evenly among the pans. Bake the layers on the middle rack for about 20 minutes (the centers should be soft, and the tops should have set by this time).
Step 4
While the layers are baking, start preparing the frosting. In a medium bowl, beat together the cream cheese, butter, and cream with a mixer on medium speed until smooth. Add the sugar, cocoa, and vanilla.
Step 5
Beat everything well, reduce the mixer speed, and continue beating until you have a smooth creamy mixture. Place the finished frosting in the refrigerator for 20 minutes.
Step 6
Spread frosting on the first and second layers, then top with washed and dried blackberries. Apply the remaining frosting all over the outside of the cake. Decorate with berries and serve.
