Ingredients
- Wheat Flour 20 oz
- Milk 25 fl oz
- Salt to taste
- Sugar 5 oz
- Butter 0 oz
- Chocolate eggs 4 pieces
- Egg white 6 pieces
- Cocoa Powder 0 oz
- Dry yeast 0 oz
- Chocolate 5 oz
- Vanilla salt 1 piece
Step-by-Step Guide
Step 1
Pour 250 ml of milk into a saucepan and heat it to body temperature. Rub the yeast into the flour until it forms a fine crumb. Then rub in the butter, add salt, 40 g of sugar, and then 2 eggs and the milk. Add 25 g of cocoa. Knead the dough and let it rise, covered, for 45 minutes.
Step 2
Prepare the cream: mix 6 yolks, 70 g of sugar, and 5 g of flour. Heat 500 ml of milk with vanilla and 50 g of sugar. When the first bubble appears, remove from heat. Gradually pour the milk into the egg mixture, stirring constantly. Bring the sauce to a boil and cook for 2 minutes. Cool the cream and sprinkle with sugar to prevent a film from forming.
Step 3
On a floured surface, shape the dough into a rectangle. Spread the cream over the rectangle and sprinkle with chocolate. Roll the dough into a log, starting from the long edge. Cut the log into pieces about 2 cm thick and place them on a baking sheet cut side up. Brush with egg mixed with salt and let rise for 1.5 hours.
Step 4
Preheat the oven to 480°F.
Step 5
Brush the buns with egg again and place them in the preheated oven. Reduce the temperature to 355°F and bake for 12 to 15 minutes.
