- 70% Dark Chocolate 10 oz
- 10% cream 5 fl oz
- Glucose Powder 0 oz
- Wheat Flour 5 oz
- Corn Starch 0 oz
- Butter 5 oz
- Walnuts 5 oz
- Sugar 5 oz
- Ocean salt to taste
- Farm fresh eggs 4 pieces
Step-by-Step Guide
Step 1
Melt the chocolate at a temperature of 120°F. Let it cool and mix with softened butter.
Step 2
Whisk the egg yolks with sugar until thick and frothy. Add glucose syrup and mix. Gradually add the whipped yolks, cornstarch, flour, and cream. Mix until smooth.
Step 3
Whisk the egg whites until stiff peaks form. Chop the walnuts. Fold the whipped egg whites into the chocolate mixture along with the walnuts.
Step 4
Line a baking dish with parchment paper and pour the chocolate mixture into the dish. Bake at 320°F for 30 minutes. Sprinkle with sea salt before serving.
