Description

The almost finished cake (without icing and berries on top) can be placed in the refrigerator overnight to allow the layers to soak properly.

  • Wheat Flour 1½ cups
  • Sugar 1½ cups
  • 20% Sour Cream 0 oz
  • Condensed Milk 1 can
  • Cocoa Powder 8 tablespoons
  • Butter 10 oz
  • Farm fresh eggs 2 pieces
  • Walnuts 25 pieces
  • Brandy 0 oz
  • Fresh Berries 5 oz
  • Mascarpone Cheese Unagrande 20 oz
  • Cream 4 tablespoons
  • Raspberry leaves 5 oz
  • Strawberry 5 oz
  • Activated Baking Soda 2 teaspoons
  • Powdered Sugar 1 tablespoon

Step-by-Step Guide

Step 1

Beat the eggs and sugar, then gradually add the sour cream, condensed milk, and 4 tablespoons of cocoa, mixing well. Finally, extinguish the baking soda with vinegar, add it to the batter, and mix lightly. Let it sit for about 10 minutes.

Step 2

Pour half of the mixture into a pre-greased baking pan with butter. Bake for 30–40 minutes in a preheated oven at 140–300°F. Check the readiness of the layer with a toothpick. If the batter sticks to the toothpick, it needs more time in the oven.

Step 3

Remove from the oven, let cool, and cut into 2 parts. Grease the pan with butter and repeat the same with the other half of the mixture. In total, you will have 4 layers (cut each layer in half).

Step 4

Soak the layers with brandy (you can use just brandy or a mixture of brandy and sugar syrup).

Step 5

Whip the mascarpone with condensed milk, adding a bit of brandy to the cream. Alternately spread the layers with cream, sprinkle with crushed walnuts, then add a layer of berries, and then spread a little more cream. For the bottom and top layers: cream + walnuts + blueberries, for the middle layer: cream + walnuts + strawberries. The top layer remains without cream.

Step 6

Prepare the icing: in a saucepan, add the cream, melt the butter (50 grams), add sugar (3 tablespoons), cocoa (4 tablespoons), mix, and keep on low heat for about 5 minutes, allowing it to cool slightly (the icing should remain warm and not set too soon). Evenly distribute the icing over the entire cake.

Step 7

Decorate with berries and sprinkle with powdered sugar.
