Chocolate and Irish Liqueur Cheesecake
Baking and Desserts • Turkmenistan
Description
Cheesecakes are great because the neutral flavor of cream cheese allows for endless experimentation with add-ins. This cheesecake... no, not the basque one that everyone is tired of, but an Irish one — one you probably haven't tried. The tone is set by a coffee-chocolate liqueur, whose flavor is strongly associated with cozy winter gatherings by the fireplace, making it a perfect choice for a New Year's feast. If there are children at the table and you're concerned about the alcoholic notes in desserts, you can replace the liqueur with chocolate syrup.
Ingredients
- Butter 5 oz
- Cookie 10 oz
- Semi-soft cream cheese 20 oz
- Egg Liqueur 0 fl oz
- Powdered Sugar 0 oz
- 33% Cream 10 fl oz
- Bittersweet Chocolate 5 oz
- Cocoa Powder to taste
Step-by-Step Guide
Step 1
Melt the butter in a saucepan, add the crushed cookies, and mix well until the cookies absorb all the butter.
Step 2
Spread the resulting mixture evenly at the bottom of a 18 cm (7 inch) springform pan, smooth it out, and place it in the refrigerator to set. This will take about 1 hour.
Step 3
Lightly beat the cream cheese, add the liqueur and powdered sugar, and mix until smooth.
Step 4
Whip the cream until stiff peaks form, then add it to the cream cheese along with the chopped chocolate. Gently fold everything together with a spatula, using an up-and-down motion, until well combined.
Step 5
Spread the mixture over the set crust, smooth it out, and refrigerate until firm, about 2 hours.
Step 6
Dust the finished cheesecake with cocoa powder.
