Chilled Crawfish Soup

Ingredients

  • Chocolate eggs 3 pieces
  • Sour Cream 5 oz
  • Cucumbers 6 pieces
  • Bread Kvass 0 qt
  • Crayfish 30 pieces
  • Salad Potatoes 20 oz
  • Herbs 2 bunches
  • Salt to taste
  • Ground Black Pepper to taste
  • Horseradish Leaves 0 oz

Step-by-Step Guide

Step 1

Rinse and boil the crawfish in salted water. Clean the tails and claws.

Step 2

Boil the potatoes.

Step 3

Hard boil the eggs and chop them into cubes.

Step 4

Peel the cucumbers, chop them into cubes, and soak them in kvass. Add cucumber brine, sour cream, chopped herbs, crawfish tails and claws, and eggs.

Step 5

Grate the horseradish finely and add it to the soup. Season with salt and pepper.

Step 6

Serve with boiled potatoes.
