Chilled Beetroot Soup

Ingredients

  • Mustard Greens 1 bunch
  • Bread Kvass 1 glass
  • Cucumbers 2 pieces
  • Fermented Milk ½ l
  • Scallions 1 bunch
  • Dill 1 bunch
  • Chicken Egg 4 pieces

Step-by-Step Guide

Step 1

Peel the beetroot (keeping the greens), wash it, grate it, pour in a liter of cold water, and bring to a boil.

Step 2

Add the chopped greens, bring to a boil again, and cook for a couple of minutes over low heat. Drain in a colander, reserving the cooking liquid, and let everything cool down.

Step 3

Add grated cucumber, finely chopped onion, and dill to the beetroot. Pour in buttermilk and kvass, mix well, and season with salt (add a pinch of sugar if needed). Refrigerate for 2 hours. Serve cold, with boiled eggs and young potatoes.
