
Chicken Soup with Spaghetti

Description
Second option: place the chicken in cold water and bring it to a boil. Drain all the water, along with any foam, and add fresh water. Important: the chicken must be thawed beforehand!

- Onion 1 head
- Poultry 1 piece
- Potato 2 pieces
- Carrot 1 piece
- Spaghetti to taste
- Garlic 1 clove
- Bay leaf 2 pieces
- Green peppercorns to taste
- White Pepper (whole) to taste
- Salt to taste
- Herbs to taste
Step-by-Step Guide
Step 1
Bring water to a boil in a pot, then add the chicken. When the water comes to a boil again and foam appears, carefully remove it. Reduce the heat to the lowest setting. Add a washed, unpeeled onion. Simmer on low heat for 30 minutes.
Step 2
Cut the potatoes and add them to the broth. Cook for 10 minutes.
Step 3
Finely chop the onion and garlic, and grate the carrot on a coarse grater. Sauté them in a pan without stirring. When the onion turns golden, mix the sautéed vegetables together. Add the mixture to the broth and cook for 5 minutes.
Step 4
Break the spaghetti into thirds. Add to the broth. Cook for 7 minutes, stirring occasionally.
Step 5
Add a bay leaf, pepper, freshly chopped herbs (you can use frozen ones in winter), and salt. Cook for 5 minutes. Taste for salt and add more if needed.
Step 6
Remove from heat, fish out the onion, and let the soup steep for 5 minutes.
