Ingredients
- Cornish Hen 30 oz
- Water 0 qt
- Ramiro Pepper 5 oz
- Leek 0 oz
- Carrot 10 oz
- Olive Oil 1 tablespoon
- Ocean salt to taste
- Pickled Eggplant with Peppers to taste
Step-by-Step Guide
Step 1
For the mirepoix, chop the leek into small pieces.
Step 2
Do the same with the pepper and combine the ingredients in a baking dish.
Step 3
Dice the carrot. Add it to the mirepoix.
Step 4
Mix well.
Step 5
Season with salt and drizzle with olive oil.
Step 6
Place the Cornish chicken on top.
Step 7
Put it in a preheated oven at 355°F.
Step 8
After 15 minutes, remove the dish from the oven.
Step 9
Transfer the chicken to a pot and cover with drinking water. Set to high heat.
Step 10
Once the broth boils, skim off the foam and reduce the heat to just below medium.
Step 11
Add the mirepoix.
Step 12
Then add the chili and simmer for 20 minutes, avoiding a rolling boil.
Step 13
At the end of cooking, season with salt. It's ready.
