Chicken Rice Soup with Green Peas
Ingredients
- Onion 1 head
- Butter 0 oz
- Frozen green bean pods 10 oz
- Nerone Rice 5 oz
- Chicken Broth 0 qt
- Skin-On Chicken Breasts 10 oz
- Chopped Sage Leaves 2 tablespoons
- Grated Pecorino Pepato Cheese 4 tablespoons
Step-by-Step Guide
Step 1
Boil the chicken in boiling water until cooked. Cool and cut into small pieces.
Step 2
Melt the butter in a pot and sauté the finely chopped onion for 5 minutes until soft. Blend half of the peas in a blender until smooth.
Step 3
Add the rice to the onion and stir. Pour in the broth and add all the peas and chicken.
Step 4
Bring to a boil, reduce the heat, and cook uncovered for 20 minutes. Season with salt and sprinkle with parsley, Parmesan, and freshly ground black pepper.
