
Chicken Noodles with Offal

Ingredients
- Chicken Broth 0 qt
- Chicken hearts 10 oz
- Chicken gizzards 5 oz
- Udon Noodles 5 oz
- Onion 5 oz
- Carrot 1 piece
- Vegetable Oil 2 spoons
- Chopped Sage Leaves 1 tablespoon
- Bay leaf 1 piece
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Rinse the chicken offal, clean the gizzards from membranes, and cut them into small pieces. Peel and wash the carrot, then grate it coarsely. Peel, wash, and finely chop the onion. Sauté the carrot and onion in vegetable oil.
Step 2
Bring the broth to a boil, add the offal, and cook for 20 minutes. Then, add the noodles, sautéed vegetables, bay leaf, salt, and pepper, and cook until done for an additional 5 to 10 minutes.
Step 3
Serve the soup garnished with parsley.
