A simple and quick soup with chicken and noodles — yet another classic homemade recipe in our collection. Boil the chicken with vegetables, prepare a sauté of onions and carrots, cook the potatoes, and combine everything in a pot, seasoning with your favorite spices. The final touch is the noodles, which will make the soup even heartier.
Ingredients
- Water 5 qt
- Poultry 20 oz
- Vermicelli 0 oz
- Salt to taste
- Ground Black Pepper to taste
- Chicken Seasoning to taste
- Parsley to taste
- Carrot 2 pieces
- Onion 2 pieces
- Potato 3 pieces
- Vegetable Oil 0 fl oz
Step-by-Step Guide
Step 1
Prepare chicken broth: place the chicken in water and bring it to a boil.
Step 2
When the water boils, reduce the heat and skim off the foam.
Step 3
Peel the carrot and onion (do not chop them) and add them to the pot with the chicken. Simmer on low heat for 40-50 minutes, uncovered.
Step 4
After the broth has finished cooking, strain it and discard the carrot and onion (they have given up their flavors).
Step 5
Remove the chicken meat from the bones and chop it.
Step 6
Dice the potatoes, add them to the broth, and cook for about 15 minutes after it starts boiling.
Step 7
Finely chop the onion, grate the carrot on a coarse grater, and sauté them in vegetable oil in a skillet over low heat.
Step 8
Add the sautéed vegetables and chicken to the soup. Bring to a boil.
Step 9
Then add the vermicelli and cook for 5-7 minutes until the vermicelli is tender.
Step 10
Season with salt, pepper, and add spices to taste.
Step 11
Turn off the heat, add chopped herbs, and let it steep covered.
