One of the best soups in Russian cuisine. A simple and comforting chicken soup that is especially enjoyable in winter.
Ingredients
- Poultry 1 piece
- Onion 2 pieces
- Carrot 1 piece
- Bay leaf 1 piece
- Clove 2 pieces
- Green peppercorns to taste
- Allspice berries to taste
- Vegetable Oil 0 fl oz
- Udon Noodles 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Place the chicken in a deep pot and cover with 4 liters of water. Bring to a boil over high heat, then reduce the heat and skim off the foam.
Step 2
Add a whole onion, whole peppercorns, a bay leaf, and a clove. Simmer over low heat, uncovered, for 1.5 hours. The broth should reduce by about a third.
Step 3
Finely chop the remaining onion.
Step 4
Dice the carrot into medium cubes.
Step 5
Sauté the onion in vegetable oil until translucent.
Step 6
Add the carrot and sauté for another 2 minutes, then remove from heat.
Step 7
Remove the chicken from the broth and strain the broth through a sieve.
Step 8
Remove the meat from the chicken, discard the bones, and cut or tear the larger pieces of meat.
Step 9
Place the strained broth over heat, bring it to a boil, season with salt, then add the sautéed vegetables, chicken, and noodles.
Step 10
Cook until the noodles are done.
