Chicken Kharcho with Nuts

Ingredients

  • Onion 4 heads
  • Poultry 1 piece
  • Wheat Flour 1½ spoons
  • Tkemali 1½ glasses
  • Walnuts 5 oz
  • Garlic 4 cloves
  • Cilantro 2 spoons
  • Khmeli-suneli 1 tablespoon
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the prepped and rinsed chicken carcass into small pieces, cover with 2-2.5 liters of cold water, and cook until the meat is half done.

Step 2

In a separate pot, sauté the finely chopped onion in the fat skimmed from the broth, then add the pieces of chicken removed from the broth and simmer, stirring occasionally, for another 15 minutes.

Step 3

Then add wheat or corn flour.

Step 4

After 5 minutes, pour in the chicken broth and simmer for 10-15 minutes.

Step 5

Add tkemali or tomatoes, bring to a boil, and season with crushed walnuts mixed in broth, garlic, bay leaf, khmeli-suneli, salt, and fresh cilantro.
