Chicken Gizzard Risotto with Cheese
Ingredients
- Chicken gizzards 15 oz
- Rice 10 oz
- Onion 1 head
- Grated Pecorino Pepato Cheese 0 oz
- Carrot 1 piece
- Celery salt 1 piece
- Herbs 1 bunch
- Vegetable Oil 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Clove to taste
- Chicken Broth 10 fl oz
Step-by-Step Guide
Step 1
Boil the gizzards and hearts separately, adding 1/2 carrot, parsley root, and celery, and salt. Then slightly cool the offal and cut into strips.
Step 2
Boil the rice until half-cooked.
Step 3
Grate the carrot. Mix it with the rice, add the offal, pour in the chicken broth, and simmer until cooked.
Step 4
Separately, sauté the chicken liver with onion and clove. Add to the finished risotto.
Step 5
Before serving, sprinkle the risotto with grated cheese and garnish with herbs.
