
Chicken Broth with Noodles and Chicken Meatballs

Ingredients
- Poultry 20 oz
- Water 0 qt
- Carrot 5 oz
- Onion 5 oz
- Garlic 0 oz
- Bay leaf 4 pieces
- Egg white 4 pieces
- Ground meat 20 oz
- Khmeli-suneli 1 teaspoon
- Salt 2 teaspoons
- Ground Black Pepper 1 teaspoon
- Udon Noodles 5 oz
- Cilantro 2 sprigs
Step-by-Step Guide
Step 1
Peel the onions. Rinse the chicken under running water.
Step 2
Pour water into a pot.
Step 3
Boil the chicken with onion, bay leaves, salt, and pepper for 40 minutes.
Step 4
Strain the broth and return it to the heat. Set the chicken aside; it will not be needed anymore.
Step 5
Peel the carrot, grate it, and add it to the broth.
Step 6
In a bowl, mix the ground chicken with one egg, khmeli-suneli, minced garlic, salt, and pepper.
Step 7
Form small meatballs.
Step 8
Add the meatballs to the boiling broth.
Step 9
Cook them until done, about 10 minutes.
Step 10
Add the noodles and cook until ready according to the package instructions.
Step 11
Serve with fresh cilantro.
