- Poultry 3 pieces
- Onion 5 oz
- Carrot 5 oz
- Celery salt 5 oz
- Morels 0 oz
- Butter 0 oz
- Canned Truffles 0 oz
- Truffle Oil 0 fl oz
Step-by-Step Guide
Step 1
Place the chicken in a pot, cover with water, and put it on the stove. Once the water in the pot boils, reduce the heat and remove the foam that forms on the surface with a spoon.
Step 2
Remove the chicken and place the next one in. Repeat the foam removal procedure, then add the third chicken, cook it as well, and remove the foam again.
Step 3
In a skillet, sauté the onion, carrot, and celery without adding oil. Boil the morels separately until cooked. Add the vegetables, morels, and butter to the pot with the chicken and continue to simmer on low heat, adding salt.
Step 4
Before serving, drizzle the broth with truffle oil and sprinkle with finely grated truffle. Garnish with green onions.
