Ingredients

  • Leek 2 stalks
  • Poultry 1 whole
  • Onion 2 heads
  • Garlic 8 cloves
  • Carrot 2 pieces
  • Radish 8 pieces
  • Olive Oil 4 tablespoons
  • Scallions 1 bunch
  • Whole egg 1 piece
  • Mustard Greens ½ tablespoon
  • Bay leaf 3 pieces
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Place the chicken in a pot, cover with water, put on the heat, and bring to a boil. Add chopped onion and 7 cloves of garlic, bay leaf, and pepper. Cook for 2 hours. Remove the chicken from the broth and set aside.

Step 2

Add sliced carrots to the broth and cook for 15 minutes. Then add the chopped leeks and cook for another 5 minutes.

Step 3

Separate the chicken meat from the bones, remove the skin, and cut the meat into pieces. Add to the broth and bring to a boil.

Step 4

Whisk together the egg yolk, mustard, olive oil, and finely chopped garlic.

Step 5

Pour the resulting sauce into the broth, stir, and garnish with finely chopped radish and green onion.
