Ingredients
- Poultry 1 piece
- Onion 2 heads
- Bay leaf 2 pieces
- Green peppercorns 5 pieces
- Citrus Zest Mix 1 piece
- Carrot 1 piece
- Milk 5 fl oz
- Wheat Flour 20 oz
- Dry yeast 0 oz
- Margarine 5 oz
- Sugar a pinch
- Egg white 2 pieces
- White Cabbage 0 lbs
- Vegetable Oil 2 tablespoons
- Salt to taste
- White Pepper (whole) to taste
Step-by-Step Guide
Step 1
Thoroughly wash the chicken inside and out, place it in a large pot, and cover with 2.5 liters of water. Bring it to a near boil.
Step 2
Wash and peel the onion and carrot. When the broth starts to boil, add the onion and carrot, bay leaf, peppercorns, and lemon zest. Season with salt and simmer for 2 hours. The broth should not boil vigorously, or it will become cloudy.
Step 3
Sift the flour into a bowl and make a well in the center. Crumble the yeast into it, sprinkle with sugar, and pour in warm milk. Sprinkle with flour on top and place in a warm spot for 15 minutes.
Step 4
Then mix the resulting sponge with the flour, add warm margarine and salt. Knead the dough, cover it, and place it in a warm spot until it doubles in size.
Step 5
For the filling, clean and finely chop the onion and cabbage. Heat vegetable oil in a large skillet and sauté the onion.
Step 6
Add the cabbage, season with salt and pepper, stir, cover, and simmer for 30 minutes until all the liquid evaporates. Remove from heat and let it cool.
Step 7
Beat the egg. Season the cooled cabbage again with salt and pepper and mix with the egg.
Step 8
Knead the dough, divide it into 2 parts, roll out one part, and place it on a greased baking sheet.
Step 9
Beat the remaining egg and brush half of the dough with it. Spread the cabbage filling evenly, leaving the edges of the dough free.
Step 10
Roll out the remaining dough and cover the filling with it. Pinch the edges.
Step 11
Prick the dough with a fork and let it rest for 15 minutes.
Step 12
Preheat the oven to 390°F. Brush the dough with the remaining egg and place it in the oven for 20 minutes.
Step 13
Strain the finished broth and pour it into soup bowls. You can sprinkle with herbs on top. Serve with the warm pie.
