
Chicken and Mushroom Pie

Description
Another combination of chicken and mushrooms; note that it is preferable to use porcini mushrooms here. This recipe was shared with us by chef John Smith from a local wine bar.
Ingredients
- Puff Pastry 2 pieces
- Wheat Flour 10 oz
- Chicken Egg 5 pieces
- Butter 5 oz
- Milk 15 fl oz
- Chicken fillet 5 oz
- Salt 0 oz
- Ground Black Pepper 0 oz
- Onion 5 oz
- Porcini Mushrooms 5 oz
- Champignons 0 oz
- 33% Cream 5 fl oz
Step-by-Step Guide
Step 1
Mix together milk, 3 eggs, 200 grams of flour, 30 grams of butter (or the same amount of vegetable oil), and 2–3 grams of salt. The mixture should have a liquid consistency.
Step 2
Cook the pancakes in a skillet.
Step 3
Sauté the chicken fillet with onions and mushrooms in 50 grams of butter.
Step 4
Add the cream, season with pepper, add 1 gram of salt, and simmer for 10 minutes. Then remove from heat and let it rest.
Step 5
Roll out the puff pastry, sprinkle with flour (50 g), and layer the prepared pancakes inside, one at a time, alternating with the filling.
Step 6
Fold everything into an envelope.
Step 7
Place on parchment paper and bake at 320°F for 20 minutes.
Step 8
Then reduce the temperature to 120 degrees.
Step 9
Brush with a mixture of one egg and 50g of butter.
Step 10
Leave in the oven for an additional 15 minutes.
