
Chia Seed and Mango Pudding

Description
When soaked, chia seeds release gelatin, making them perfect for a delicious and nutritious pudding. You can experiment with different flavors by adding any fruits you like. The pudding can be stored in a sealed container in the refrigerator for no more than 4 days.
Ingredients
- Chia Seeds 4 spoons
- Mango 1½ glasses
- Coconut Milk ½ glasses
- Milk ½ glasses
- Vanilla extract ½ spoons
- Water 1 glass
- Fresh Mint to taste
- Sugar 1 tablespoon
- Chopped almonds a pinch
Step-by-Step Guide
Step 1
Blend the mango flesh in a blender, gradually adding water until you achieve a thick sauce. Fill the glasses one-third full with the sauce and refrigerate for one hour.
Step 2
In a separate bowl, mix the coconut milk and cow's milk together, then add vanilla and sugar (or simply a tablespoon of vanilla sugar). Stir well and add the chia seeds. Mix for 3-4 minutes, until the mixture begins to thicken, then set aside for another 5 minutes until fully thickened.
Step 3
Fill the cups with the mango sauce and the mixture of milk and chia seeds, then leave them in the refrigerator overnight, or for at least 4 hours.
Step 4
Before serving, sprinkle with chopped nuts or mint leaves.
