
Cherry Tomato Quiche

Ingredients
- Marinated cherries 20 oz
- Goat cheese 0 oz
- Emmental cheese 5 oz
- Sour Cream 5 oz
- Scallions 1 bunch
- Cold-smoked trout 5 oz
- Wheat Flour 10 oz
- Chicken Egg 2 pieces
- Butter 5 oz
- Whole egg 1 piece
- Salt a pinch
- Water 2 spoons
Step-by-Step Guide
Step 1
Place the tomatoes on a baking sheet and roast in the oven for ten minutes at 355°F. Allow to cool, peel off the skin, drizzle with oil and vinegar, and season with salt and pepper.
Step 2
Use your hands to rub the flour into crumbs with the butter, then add the egg yolk, salt, water, and knead into a smooth, elastic dough. Press the dough into the bottom of a 18–20 cm diameter baking dish, forming a border that is 3 cm high.
Step 3
Finely chop the onion. Grate the cheese. Cut the fish into small cubes. For the filling, mix the cheese, two eggs, sour cream, onion, and fish, and pour into a baking dish. Bake at 355°F for thirty-five minutes. Top with marinated cherry tomatoes.
