Description

Adjust the amount of pepper to your taste, if desired. Or simply omit the pepper if you're hesitant, and grind it on top of the sorbet just before serving. Pairings: chocolate truffles, chocolate cake/tart/brownies, grilled nectarines/peaches/apricots.

Ingredients

  • Marinated cherries 4 cups
  • Oranges ½ piece
  • Agave Syrup 5 tablespoons
  • Ground Black Pepper ¾ teaspoon
  • Salt a pinch
  • Ground Nutmeg a pinch

Step-by-Step Guide

Step 1

Combine the cherries, juice of half an orange, agave syrup, salt, pepper, and ground nutmeg in a saucepan, place over medium heat, and cook until the berries are soft. Remove from heat, blend in a blender, and strain through a sieve to achieve a smooth consistency.

Step 2

Refrigerate the mixture overnight.

Step 3

Freeze the sorbet in an ice cream maker according to the instructions.

Step 4

If you don't have an ice cream maker, you can still make a delicious granita by hand (almost like sorbet but with larger ice crystals). For granita, pour the mixture into a container, place it in the freezer, and stir with a fork every 20 minutes to break up the freezing crystals until fully frozen.
