Cherry Pie with Cottage Cheese Dough
Ingredients

- Cottage cheese 5 oz
- Wheat Flour 5 oz
- Marinated cherries 20 oz
- Gelatin 0 oz
- Water 0 fl oz
- Sugar 5 oz
Step-by-Step Guide
Step 1
Cut the cold butter into pieces and combine it with the flour, continuing to cut until the mixture is fairly uniform and the pieces are small, like crumbs. Add sugar and cottage cheese, quickly knead the dough, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes to 1 hour.
Step 2
Place the frozen cherries in a pot, add sugar, and set over low heat. The amount of sugar can be adjusted depending on the acidity of the cherries. During heating, a fair amount of liquid will be released from the berries.
Step 3
In a separate bowl, soak the gelatin in cold water (about 50 ml) for 10–15 minutes.
Step 4
When the berries come to a boil, turn off the heat and add the soaked gelatin. Mix thoroughly until it is completely dissolved and place in a cool place to let the filling cool to room temperature.
Step 5
Roll out the dough to a thickness of about 0.5–1 cm and evenly distribute it in a baking dish. Make several punctures with a fork. Bake in a preheated oven for 15–20 minutes at 355°F until golden brown.
Step 6
On the baked base, place the cherries (without the liquid) and put the semi-finished product in the refrigerator. Also, cool the released juice.
Step 7
When the cherry juice starts to thicken slightly but is still liquid, pour it over the pie base and immediately place it in the cold; the jelly should set. It is important not to pour too warm juice onto the pie so that it does not soak the base.
