Cherry Chocolate Cheesecake
Ingredients

- Dark Chocolate 15 oz
- Brown Sugar 5 oz
- Cornstarch 3 tablespoons
- Cream Cheese 30 oz
- Oranges 2 pieces
- Eggs 2 pieces
- 48% Cream 5 fl oz
- Cinnamon stick 1 piece
- Pitted Cherries 10 oz
- Rum ½ teaspoon
- Vanilla Pod 1 piece
- 20% Cream 5 fl oz
- Shortbread Cookies 5 oz
Step-by-Step Guide
Step 1
First, preheat the oven to 180ºC. We will bake the cheesecake in a 24 cm diameter pan. Take the pan, grease it with butter, and create a French coat (sprinkle with flour, then turn it upside down and shake out the excess flour).
Step 2
In a bowl, crumble the cookies and add the melted butter (150 g). After mixing well, spread the mixture on the baking sheet and flatten it evenly. Bake the base in the oven for 10 minutes, then let it cool. Increase the oven temperature to 200 degrees.
Step 3
The next step is to prepare the cheesecake itself. Mix the sugar (100 g) and cornstarch (3 tablespoons), and stir. Add the cream cheese and beat well. Add the eggs and mix thoroughly until the mixture is smooth and airy. Prepare the vanilla pods by carefully slicing them open and extracting the seeds. Reduce the mixer speed and start adding the cream (48%), then add the vanilla seeds and orange zest, and mix well again.
Step 4
Place half of the cherries in a bowl and mash them with a slotted spoon. Reserve the other half for decoration. Drain the resulting liquid. Add the cherries and finely chopped chocolate (300 g). Mix well. Spread this mixture over the pre-baked base, distributing it evenly. Press a few cherries into the top.
Step 5
Bake the cheesecake in the oven for 40-45 minutes — the surface should become slightly brown and the edges should be 'set'. When the cheesecake is ready, remove it and let it cool at room temperature (you can place it in the refrigerator).
Step 6
Now, prepare the chocolate sauce for decoration. Pour the cream (20%) into a saucepan and simmer over low heat, stirring constantly. When bubbles start to appear, add the remaining chopped chocolate and rum (or whiskey) and continue stirring until everything melts. Let it cool.
Step 7
Remove the cheesecake and the remaining cherries. Drizzle the cheesecake with chocolate and scatter some cherries on top (as an option, you can serve the chocolate and cherries separately, but when serving, place a piece of cheesecake drizzled with chocolate and cherries).
