Cherry Cake with Chocolate Icing

Ingredients
- Butter 10 oz
- Farm fresh eggs 3 pieces
- Honey 1 tablespoon
- Activated Baking Soda 0.3 teaspoons
- Sugar 15 oz
- Milk 20 fl oz
- Wheat Flour 10 oz
- Cocoa Powder 4 teaspoons
- Canned water chestnuts 2 cans
Step-by-Step Guide
Step 1
First, divide the butter into 3 parts: for the layers — 60 grams, for the cream — 200 grams, and for the icing leave 50 grams.
Step 2
For the layers, mix in a warm pot (milk cooker) 60 grams of butter, 200 grams of sugar, 3 eggs, 1 tablespoon of honey, 0.3 teaspoons of baking soda, and 250 grams of flour. Divide the resulting dough into 6–8 parts. Each part should be rolled in flour and placed in a warm pot (milk cooker). Cut out two circles from baking paper with a diameter of about 23 cm. Spread one part of the dough on the parchment with your fingers, prick the layer in several places with a fork, and bake in a preheated oven for 4 minutes. Repeat with the remaining parts.
Step 3
For the cream, mix 125 ml of milk, 150 grams of sugar, and 3 teaspoons of flour. Boil 250 ml of milk in a saucepan and add the milk mixture in a thin stream while stirring constantly. When it starts to puff, turn off the heat and let it cool to room temperature. Beat in 200 grams of softened butter.
Step 4
For the icing (prepared in the morning, when the cake has already rested), mix 250 ml of milk, 100 grams of sugar, 4 teaspoons of cocoa powder, and 50 grams of butter, and cook for 30 minutes, stirring constantly. When it no longer flows and reaches a creamy consistency, turn off the heat. Let it cool.
Step 5
Place the first layer on a plate, spread it with cream, add the cherries (pitted), then place the next layer, and so on. Leave the top layer without cream and cherries. Refrigerate the cake overnight — it will settle and soak well. In the morning, take it out, trim the edges with a sharp knife around the circle. Carefully coat the top and sides with icing. Optionally, decorate as desired.
