Cherry and White Chocolate Ganache Cake
Ingredients
- Ground dried cherries 10 oz
- Orange juice concentrate 5 tablespoons
- Butter 5 oz
- Chopped almonds 5 oz
- Sugar 5 oz
- Vanilla salt 0 oz
- Wheat Flour 5 oz
- Chocolate eggs 3 pieces
- White Chocolate 5 oz
- Cream 22% 5 fl oz
- Red cocktail cherry 10 pieces
Step-by-Step Guide
Step 1
Soak the dried cherries in orange juice for 2 hours or ideally overnight. You can also soak them in liqueur or brandy.
Step 2
Beat the softened butter with sugar. Whisk the eggs and gradually add them to the butter. To prevent separation, add a little flour. Beat until creamy.
Step 3
Chop the almonds in a blender.
Step 4
Combine the soaked cherries, almonds, vanilla sugar, and baking powder with the butter and eggs. Mix well.
Step 5
Add the remaining flour and mix thoroughly, evenly distributing the cherries.
Step 6
Fill the cake molds. Place in a preheated oven at 355°F (350 degrees Fahrenheit). Bake for 15–20 minutes, depending on your oven. You can use a larger cake pan, which will require baking for 50–60 minutes at 355°F (350 degrees Fahrenheit). Let the finished cakes cool completely in the molds. They will be fragile until cooled.
Step 7
Break the chocolate into pieces and melt it in a water bath, add the cream, bring to a slight boil, and remove from heat. Mix well. Let it cool.
Step 8
Spread the ganache on top of the cakes and decorate with cocktail cherries.
