Cherry and Ginger Chocolate Cookies (Florentines)
Ingredients
- Butter 2 tablespoons
- Brown Sugar 5 oz
- Wheat Flour 2 teaspoons
- Crème fraîche 5 fl oz
- Chopped almonds 0 oz
- Dried ground orange peel 2 tablespoons
- Ground dried cherries 0 oz
- Candied fruits 0 oz
- Liquid dark chocolate 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
In a saucepan, combine softened butter, sugar, and flour. Place over medium heat and stir until smooth and the sugar has dissolved.
Step 3
Gradually stir in the crème fraîche.
Step 4
Then add the almond flakes, chopped candied citrus peel, ginger, and cherries. Mix well.
Step 5
Line a baking sheet with parchment paper and drop spoonfuls of the cookie mixture about 2.5 cm apart.
Step 6
Bake in the oven for 12–15 minutes until golden. Cool on the baking sheet.
Step 7
Melt the chopped chocolate in a double boiler.
Step 8
Carefully dip each cookie into the chocolate, covering only the bottom. Place on a rack and let the chocolate set.
