
Cheesy Soup with Carrots and Shrimp

Ingredients
- Salt to taste
- Sliced Processed Cheese 15 oz
- Potato 10 oz
- Carrot 10 oz
- Peeled Cooked Shrimp 15 oz
- Herbs to taste
Step-by-Step Guide
Step 1
Dissolve the processed cheese in boiling salted water. Soft cheese without additives works best.
Step 2
Peel the potatoes, cut them into small cubes, and place them in water with cheese. Cook for 10-15 minutes over medium heat.
Step 3
Grate the peeled carrot on a fine grater. The finely grated carrot will be almost undetectable in the soup but will impart both color and flavor. Sauté the carrot in vegetable oil for 3-4 minutes. Be careful not to brown it; it should just become slightly softer.
Step 4
Once the potatoes are cooked, add the carrots and peeled shrimp to the soup. Bring the soup back to a boil, taste for salt, and add more if necessary.
Step 5
At the very end, add the herbs to the soup, stir, and turn off the heat. Cover with a lid and let it steep for about 30 minutes.
