  • Shelled pumpkin seeds 5 oz
  • Sugar 10 oz
  • Semi-soft cream cheese 20 oz
  • Farm fresh eggs 2 pieces
  • Sour Cream 5 oz
  • Vanilla extract 1 teaspoon
  • Shortbread Cookies 5 oz
  • Butter 0 oz

Step-by-Step Guide

Step 1

First, prepare the praline.

Step 2

Finely chop the walnuts. Grease a baking tray well with butter and pour the walnuts onto it. Pour 125 g of sugar into a saucepan and melt it over low heat, stirring constantly. Once it reaches an amber color, remove the melted sugar from the heat and pour it over the walnuts on the tray.

Step 3

Prepare the cheesecake base.

Step 4

Crush the shortbread cookies into fine crumbs and add the softened butter. Mix well. Transfer to a baking pan with a diameter of about 23 cm and spread evenly across the bottom.

Step 5

Prepare the filling.

Step 6

Whisk the cream cheese with 100 g of sugar until smooth. Add the eggs one at a time, mixing well after each addition. Add the sour cream and vanilla extract, and mix again thoroughly.

Step 7

Gently fold the ground praline into the cream. Pour it over the base in the pan.

Step 8

Preheat the oven to 320°F and place the pan inside. Place a metal container with hot water at the bottom of the oven. Bake for exactly one hour, until the edges are set and the center starts to jiggle slightly.

Step 9

Carefully run a knife between the edge of the pan and the cheesecake to separate it. Let it cool to room temperature, then refrigerate for at least three hours. Garnish with walnut halves.
