Ingredients

  • Shortbread Cookies 15 oz
  • Butter 5 oz
  • Cottage cheese 15 oz
  • Sour Cream 15% 10 oz
  • Milk 5 fl oz
  • Brown Sugar 5 oz
  • Agar-Agar 2 tablespoons
  • Fruits to taste

Step-by-Step Guide

Step 1

Crush the cookies (I used traditional 'Yubileynoye' cookies) finely by hand, with a pestle, or in a blender. It's easier to do this in a blender, and the crumbs turn out finer. You can also crush the cookies with a rolling pin: place the cookies in a bag, tie it up, and roll it out well with a rolling pin.

Step 2

Take the butter out of the refrigerator in advance so that it softens at room temperature. Mix the butter with the crushed cookies. Again, you can do this by hand or in a blender. You should get a sticky, homogeneous mixture.

Step 3

Line the cheesecake mold with plastic wrap. The edges of the wrap should hang over the sides. The plastic wrap is needed to easily remove the finished cheesecake from the mold later. If you have a springform pan, you can skip the plastic wrap and place parchment paper at the bottom.

Step 4

Spread the 'dough' made of butter and cookies into the mold, distributing it evenly across the bottom and up the sides, smoothing it out. The cheesecake base is ready. Place it in the freezer and start preparing the filling. The base will have time to set.

Step 5

Meanwhile, mash the cottage cheese with the sour cream until you get a smooth mixture. I mash it with a fork. You can blend the sour cream with the cottage cheese in a blender. As soon as the sweet dairy mixture comes to a boil, remove it from the heat and pour it into the cottage cheese-sour cream mixture. Mix everything immediately. Right away, because agar sets quickly!

Step 6

Immediately take the mold with the base out of the freezer and pour the filling into it. Smooth it out.

Step 7

Place the no-bake cheesecake in the refrigerator for a couple of hours to set and chill properly. Better yet, leave it overnight. Carefully remove the finished cheesecake with cottage cheese from the mold by pulling on the edges of the plastic wrap. Decorate the cheesecake to your liking with berries, fruits, or chocolate. Before serving, you can drizzle the cheesecake with jam.
