Description

My son loves brownies, my husband loves cheesecake, and I enjoy both desserts. This recipe is a wonderful way to make everyone happy at once.

Ingredients

  • Wheat Flour 1¼ g
  • Salt 1 tablespoon
  • Cocoa Powder 2 spoons
  • 70% Dark Chocolate 10 oz
  • Butter 5 oz
  • Sugar 2 glasses
  • Brown Sugar ½ glasses
  • Chicken Egg 7 pieces
  • Vanilla extract 2¼ spoons
  • Semi-soft cream cheese 10 oz
  • Ricotta cheese 10 oz

Step-by-Step Guide

Step 1

Preheat the oven to 355°F. Grease the baking dish with butter; you can also line the bottom with parchment paper, which should be greased as well.

Step 2

Let's start with the brownie base. In a large bowl, combine flour, salt, and cocoa powder.

Step 3

Melt bittersweet chocolate and butter in a double boiler. Turn off the heat, but do not remove the mixture from the double boiler. Add sugar — white (1.5 cups) and brown. Stir until the sugar dissolves. Remove the mixture from the double boiler and let it cool to room temperature.

Step 4

Add 3 eggs to the mixture and stir. Then add one more egg and mix again. Add the fifth egg and stir once more. Finally, add 2 teaspoons of vanilla extract and mix again.

Step 5

Add the dry mixture of ingredients (flour, salt, and cocoa) to the prepared mixture and stir thoroughly until the dry ingredients are completely incorporated.

Step 6

Now let's move on to the cheesecake layer. It's quite simple: combine the soft cheese (you can use mascarpone, or 'Almette', etc.), ricotta, and the remaining 1/2 cup of sugar. Add the egg yolks (2) and vanilla extract (1/4 teaspoon), and mix until smooth.

Step 7

Pour the brownie mixture into the pan and smooth it out with a spatula. Now, make 8 dollops of the cheesecake mixture on top and gently swirl each dollop into the brownie layer using circular motions.

Step 8

Bake for 40–50 minutes. Check for doneness with a toothpick: if it's ready, a few moist crumbs will stick to the toothpick. Allow to cool and serve!
