Description

Cheese soup with mushrooms and croutons.

Ingredients

  • Onion 1 head
  • Fresh Mushrooms 20 oz
  • Parsley to taste
  • Butter 0 oz
  • Salt to taste
  • Vegetable Oil 0 fl oz
  • Water 1½ l
  • French Baguette 5 oz
  • Sliced Processed Cheese 5 oz

Step-by-Step Guide

Step 1

Heat a skillet and add a little vegetable oil. Place finely chopped onion in the skillet and let it cook for a couple of minutes.

Step 2

Next, add the coarsely chopped mushrooms. Cook for 15–20 minutes over low heat. Add salt to taste.

Step 3

At this time, pour 1.5 liters of water into a pot, bring it to a boil, and dissolve the processed cheese in it, stirring constantly. Bring it to a boil again and let it simmer for 2–3 minutes.

Step 4

Transfer the cooked mushrooms to a pot with cheese broth and let them simmer for another 2–3 minutes over low heat. Add some butter. You can also add more salt, as the cheese broth tends to be a bit bland on its own. Remove from heat.

Step 5

Meanwhile, chop the parsley. You can add it directly to the pot or serve it individually in bowls. Croutons made from fresh bread also pair well with this soup.

Step 6

For the croutons, cut the bread into cubes and place them on a baking sheet or skillet greased with vegetable oil. Bake in a preheated oven at 390°F for 5–7 minutes, then remove and serve alongside the soup. Add the croutons individually to each bowl.
