Cheese Soup with Croutons
Soups • French
Description
1. You can use any broth, especially if you're using a bouillon cube. 2. Choose a soft cheese that melts easily. But even if it doesn't melt completely, it will still look beautiful and taste delicious. 3. You can use any type of bread, whether stale or fresh, it doesn't matter.
Ingredients
- Butter 0 oz
- Chicken Broth 0 qt
- Wheat Flour 0 oz
- 10% cream 5 fl oz
- Ketchup 2 spoons
- Olive Oil 3 spoons
- White bread 0 oz
- Hard Cheese 10 oz
- Garlic 3 cloves
Step-by-Step Guide
Step 1
Prepare the broth (dissolve the cubes in a separate pot). Alternatively, use fresh broth, ensuring it has no solids and, if possible, no fat.
Step 2
In a preheated saucepan with a thick bottom, add the oil and allow it to melt. Then, sprinkle in the flour, mixing thoroughly and letting it lightly brown. Gradually add the broth, stirring continuously to avoid lumps (it's very simple; just take your time and add the broth one tablespoon at a time).
Step 3
Then squeeze the garlic into the soup. Let it simmer for 5–7 minutes (cover with a lid and keep the heat on medium).
Step 4
Pour in the cream, stir, cover with a lid, reduce the heat, and let it sit for 3 minutes.
Step 5
Add the grated cheese and mix well. Simmer gently, DO NOT BOIL!!! Then add the ketchup and stir until a pink hue appears.
Step 6
For the croutons, cut the bread into cubes, add butter, and toast until golden brown.
Step 7
Ladle the finished soup into bowls and garnish with croutons straight from the skillet to make them sizzle.
