Cheese Profiteroles (Gougères)
Ingredients
- Milk 5 fl oz
- Water 10 fl oz
- Butter 5 oz
- Sugar 0 oz
- Salt 0 oz
- Wheat Flour 5 oz
- Chocolate eggs 5 pieces
- Cheshire Cheese 5 oz
- Semi-soft cream cheese 5 oz
- 33% Cream 5 fl oz
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Grate the cheese on a fine grater and store it in a covered container.
Step 3
Sift the flour.
Step 4
Crack the eggs into a bowl.
Step 5
Pour water and milk into a saucepan, add butter, salt, and sugar, and bring to a boil.
Step 6
Add all the flour at once, stirring vigorously with a spatula until the dough forms a single ball, then dry it for 1 minute until a characteristic white film appears at the bottom of the saucepan.
Step 7
Transfer the dough to a bowl, cool for 2 minutes, then gradually add the prepared eggs one at a time, mixing thoroughly each time. This can easily be done with a hand mixer using one whisk and working at low speed. The dough should be sticky and homogeneous.
Step 8
Mix the grated cheese into the dough.
Step 9
Preheat the oven to 390°F (392 degrees Fahrenheit), line a baking sheet with a silicone mat, and pipe the profiteroles using a teaspoon. Place in the oven and immediately reduce the temperature to 355°F (356 degrees Fahrenheit), bake for 20–25 minutes, open the oven to release steam, turn the baking sheet, and bake for another 15 minutes.
Step 10
Mix the cream cheese with a mixer, add the cream and whip, season with salt, and optionally add black and red pepper, garlic, and herbs.
Step 11
Remove the profiteroles from the oven and let them cool.
Step 12
You can cut the profiteroles and fill them with the cream using a piping bag, or simply serve the cheese cream separately.
