Cheese Dough Pies with Mushrooms and Camembert
Ingredients
- Cottage cheese 10 oz
- Chocolate eggs 2 pieces
- Sugar 2 teaspoons
- Activated Baking Soda ½ teaspoon
- Camembert cheese 5 oz
- Fresh Mushrooms 20 oz
- Spanish onions 2 pieces
- Vegetable Oil 3 tablespoons
- Salt 0 oz
- Ground Black Pepper 0 oz
- Wheat Flour 10 oz
Step-by-Step Guide
Step 1
Cut the champignons lengthwise into 4 parts and then chop them crosswise (you can replace champignons with any other mushrooms; I used chanterelles).
Step 2
Finely chop the onion and fry it until golden in 3 tablespoons of oil.
Step 3
Add the champignons and fry until the liquid evaporates.
Step 4
Season with salt and pepper (to taste), mix, and let it cool completely.
Step 5
Cut the cheese into small cubes, add it to the fried mushrooms, and mix.
Step 6
Optionally, you can add finely chopped parsley.
Step 7
Put all the ingredients for the dough into a bowl (cottage cheese + flour + eggs + 1 teaspoon of salt + sugar + baking soda) and knead the dough.
Step 8
Sprinkle 50 g of flour on the work surface (weigh separately), divide the dough into equal parts.
Step 9
Shape the pieces into balls, roll each ball out fairly thinly on a floured surface.
Step 10
Place the filling in the center, pinch the edges, and shape into an elongated pie.
Step 11
Fry the pies in enough vegetable oil, placing them seam side down.
Step 12
The pies fry very quickly, so I usually prepare all the dough first and then fry them. This dough recipe is only suitable for fried pies and only with savory fillings.
Step 13
Place the pies on paper towels to absorb excess oil; if the filling contains cheese, serve immediately, but they also taste great when cooled, maintaining their softness; store under plastic wrap.
