Description

Recipe for quick puff pastry: you will need 4 cups of all-purpose flour, 1 package of margarine or butter (200 grams), 1 egg, 1/3 cup of cold boiled water, salt, and baking soda activated with lemon juice. Sift the flour and add salt. Grate the margarine or butter into the flour using a coarse grater and chop with a knife until crumbly. Gather the crumbs into a mound and make a well at the top, where you will crack the egg and add the baking soda, along with a few drops of lemon juice. Gradually add water to knead the dough and refrigerate it for 30 minutes.

  • 10% cream 5 fl oz
  • Grated Pecorino Pepato Cheese 15 oz
  • Whole egg 4 pieces
  • Onion 0 lbs
  • Ground Black Pepper to taste
  • Ground Caraway 2 teaspoons
  • Ocean salt to taste

Step-by-Step Guide

Step 1

For this pie, you can use ready-made puff pastry or make it yourself. There are many recipes for puff pastry; I dare to suggest below a recipe (possibly quite well-known) for quick puff pastry.

Step 2

Slice the onion into half-rings about 0.5 cm thick. Sauté in preheated oil in a deep skillet or saucepan. Let it cool.

Step 3

Meanwhile, prepare the dough or roll out the ready-made one. Grease a baking tray with oil and lay the dough on it.

Step 4

Spread the cooled onion evenly over the dough, sprinkle with pepper, caraway seeds, and a little salt. Top with a thick layer of grated hard cheese (preferably using a fine grater). Sprinkle with caraway seeds again.

Step 5

In a deep bowl, mix the cream, egg yolks, and spices (caraway, pepper, herbs de Provence), adding salt to taste, and pour over the pie.

Step 6

First, preheat the pie with the oven door open for 5 minutes, then bake at 180–390°F for about 30 minutes until golden cream color. Serve warm.
