Ingredients
- Arborio rice 1½ cups
- Butter 1 tablespoon
- Leek 2 pieces
- Dry White Wine ½ cup
- Cheshire Cheese 1 cup
- Chicken Broth 4 cups
- Dijon Mustard ½ teaspoon
Step-by-Step Guide
Step 1
Heat the butter in a deep skillet. Finely chop the leeks and sauté for 2–3 minutes. Add the rice and cook for about a minute over medium heat. Increase the heat, start adding the wine and mustard, stirring constantly until all the liquid is absorbed.
Step 2
Preheat the vegetable broth. Pour it into the rice 1 cup at a time, making sure to add the next cup only after the previous one has been fully absorbed. Cook the rice for about 20 minutes.
Step 3
Grate the cheese. Add it to the rice, allowing it to melt completely.
