- Dry Champagne 10 fl oz

In a bowl, combine the yolks, sugar, and champagne. Place the bowl over a water bath and whisk until the mixture thickens, about 4–5 minutes.
Step 2
Remove from heat and whisk with a mixer on high speed for another 5 minutes, until the mixture increases in volume and becomes airy.
