Champagne Jelly with Fresh Red Currants

Ingredients

  • Sugar ¼ cup
  • Dry Champagne 2 cups
  • Gelatin 1 piece
  • Red Currant to taste

Step-by-Step Guide

Step 1

In a saucepan, bring 1 cup of champagne and sugar to a boil. Remove from heat and let cool slightly.

Step 2

In another bowl, dissolve the gelatin in the remaining champagne. Let it sit for 2-3 minutes.

Step 3

Combine both mixtures.

Step 4

Pour the mixture into 6 molds, placing a sprig of currants in each, and refrigerate until set for 1-1.5 hours.

Step 5

Before serving, hold the bottoms of the molds in hot water and transfer the jelly to plates.
