- Cauliflower 25 oz
- Olive Oil ⅓ cup
- Red Wine Vinegar 1½ tablespoons
- Water 1.3 cups
- Sea Salt to taste
- Ground Black Pepper to taste
- Lettuce to taste
- Onion to taste
Step-by-Step Guide
Step 1
In a high-speed blender, combine the chopped cauliflower, oil, vinegar, and water. Season with salt and pepper. Blend until you achieve a thick, smooth consistency.
Step 2
Pass through a medium sieve. Check for saltiness and pepperiness.
Step 3
Pour the soup into 4 bowls. Arrange the dried lettuce and sliced red onion around the bowl, and add a spoonful of reserved onion marinade into the soup. Serve immediately.
