Cauliflower Puree Soup with Parmesan
Ingredients
- Onion 1 head
- Cauliflower 15 oz
- Garlic 2 cloves
- Parmesan Cheese 5 oz
- Olive Oil 1 tablespoon
- Nutmeg a pinch
- Ocean salt to taste
Step-by-Step Guide
Step 1
In a heavy-bottomed pot, sauté the chopped onion and garlic in olive oil.
Step 2
Break the cauliflower into florets and boil for 5–7 minutes.
Step 3
Transfer the cooked cauliflower to the pot with the onion, add a little broth from the cauliflower, and simmer covered until ready.
Step 4
Season with salt and add a little nutmeg.
Step 5
Pass through a sieve or blend in a blender.
Step 6
Pour into ovenproof bowls, sprinkle with grated Parmesan, and optionally add garlic croutons, then place in the oven for 5 minutes at 355°F.
Step 7
To achieve a creamy flavor, you can add 2 tablespoons of low-fat cream.
